Two years ago I was very uncomfortable with my physical appearance because I had let myself become overweight. I made a commitment to begin exercising on a regular basis and to eat better. I lost about 35 pounds in five months and was feeling much better. However, my mind and body had reached a plateau and I was quickly becoming bored and frustrated. I was seeking new ideas, new challenges and new advice to motivate myself. I was also looking to improve muscle tone and definition. That is what brought me to Fit 4 Life. After just a few weeks of slow strength training and following their diet advice, I began to see amazing results. Not only did I lose body fat and increase muscle tone, I felt energized and excited. Fresh Tomato and Feta Frittata

This week's recipe comes from "Health" magazine and is a great breakfast or brunch dish. It is 300 calories and provides a much needed serving of protein in the morning. For more on the importance of getting enough protein for breakfast, see below.


Ingredients

  • 3 large eggs
  • 1/2 cup chopped tomato
  • 2 tbs feta cheese, crumbled (any low-fat cheese can be substituted, but may change the calorie content)
  • cooking spray
  • 1 slice whole wheat bread
  • 2 tsp butter substitute (such as "I Can't Believe It's Not Butter" spread)
Method

  • Whisk together 1 whole large egg, 2 large egg whites, tomato and feta cheese.
  • Cook the egg mixture over medium heat (without stirring) in a small skillet coated with cooking spray for 4 minutes, or until eggs are firm. Flip and cook other side for 2 minutes.
  • Serve with 1 slice of whole wheat toast with butter spread.
