Two years ago I was very uncomfortable with my physical appearance because I had let myself become overweight. I made a commitment to begin exercising on a regular basis and to eat better. I lost about 35 pounds in five months and was feeling much better. However, my mind and body had reached a plateau and I was quickly becoming bored and frustrated. I was seeking new ideas, new challenges and new advice to motivate myself. I was also looking to improve muscle tone and definition. That is what brought me to Fit 4 Life. Cranberry Sauce

This recipe comes from the Eat-Clean Diet Cookbook. It is an easy way to have one of my favorite holiday sides: cranberry sauce. This recipe uses fresh cranberries, so it saves you lots of the extra calories found in the canned versions. Enjoy!

Ingredients

  • 4 cups fresh cranberries, picked over
  • 1 hard, tart apple, peeled, cored and cut into chunks
  • 1 cup orange juice
  • 1 cup water
  • 1/4 cup organic honey
  • rind of 1 orange, pith removed, minced
Method

  • Rinse cranberries under running water. Place rinsed cranberries and apple in a medium saucepan with orange juice and water.
  • Cook berries over high heat until they burst. (You will hear them popping.) Reduce heat to low and add honey and orange peel. Continue cooking over low heat for another 15 minutes. The liquid should stick to the back of a spoon.
  • Remove from heat and let cool. Transfer to a bowl and cover with plastic wrap. Keep refrigerated until ready to use.
