Two years ago I was very uncomfortable with my physical appearance because I had let myself become overweight. I made a commitment to begin exercising on a regular basis and to eat better. I lost about 35 pounds in five months and was feeling much better. However, my mind and body had reached a plateau and I was quickly becoming bored and frustrated. I was seeking new ideas, new challenges and new advice to motivate myself. I was also looking to improve muscle tone and definition. That is what brought me to Fit 4 Life. Mango Chicken Salad Wrap

This week's recipe comes from "The Eat-Clean Diet for Family and Kids." It is a great mix of lean protein and complex carbohydrates and would be a perfect lunch option for the whole family.

Ingredients

  • 1 tbsp jerk seasoning
  • 1 tbsp olive oil
  • 2 boneless skinless chicken breasts
  • 1 cup sprouts
  • 1 cup baby spinach greens
  • 1 mango, peeled, pitted and diced
  • 1/2 sweet red pepper, diced
  • 1/4 cup low-fat plain yogurt
  • Juice and grated rind from 1/2 fresh lime
  • 4 six-inch multi-grain or brown-rice wraps
Method

  • In a bowl whisk jerk seasoning with oil. Add both chicken breasts and turn to coat.
  • Place chicken on parchment- lined baking sheet. Broil, turning once, for a total of 12 minutes, or until no longer pink inside.
  • Let cool slightly; cut into thin strips. In a large bowl, toss together mango, red pepper, yogurt, lime rind and juice. Lay one-quarter of the spinach and chicken in each wrap.
  • Divide the mango mixture among wraps, placing in center of each. Place 1/4 cup sprouts on each wrap. Fold both sides over filling. Roll up tightly from the end.
