Two years ago I was very uncomfortable with my physical appearance because I had let myself become overweight. I made a commitment to begin exercising on a regular basis and to eat better. I lost about 35 pounds in five months and was feeling much better. However, my mind and body had reached a plateau and I was quickly becoming bored and frustrated. I was seeking new ideas, new challenges and new advice to motivate myself. I was also looking to improve muscle tone and definition. That is what brought me to Fit 4 Life. Red Pepper Vinaigrette

This recipe was sent in by one of our very own clients. (Thanks, Marge!) Sometimes we think we're eating healthy because we're eating salad. But have you ever checked the fat and calories on that creamy ranch or blue cheese dressing?! Here is a recipe for a low calorie vinaigrette dressing so you don't undo a healthy choice by piling on unnecessary calories.

Ingredients

  • 1/4 cup apple juice
  • 1/4 cup cider vinegar
  • 2 tablespoons chopped onion
  • 2 cloves garlic, chopped
  • 1/2 teaspoon dried whole oregano
  • Pinches of rosemary and thyme
  • 1/2 teaspoon dry mustard powder
  • 1/2 teaspoon paprika
  • 1/2 of a roasted red bell pepper
Method

  • Combine all ingredients in a blender container. Blend to mix thoroughly
