Two years ago I was very uncomfortable with my physical appearance because I had let myself become overweight. I made a commitment to begin exercising on a regular basis and to eat better. I lost about 35 pounds in five months and was feeling much better. However, my mind and body had reached a plateau and I was quickly becoming bored and frustrated. I was seeking new ideas, new challenges and new advice to motivate myself. I was also looking to improve muscle tone and definition. That is what brought me to Fit 4 Life. Veggie-licious Guacamole

This recipe will help ring in the new season -- football season! Serve it at your next party and no one will realize they are eating healthy.

Ingredients

  • 2 avocados
  • 1 lemon, juiced
  • 2 tbsp chopped cilantro
  • 1 small tomato (plum or roma)
  • 1 jalapeno, seeds and white ribs removed
  • 1/2 cup chopped green pepper
  • 1 small white onion, chopped
  • salt and pepper to taste
Method

  • Mash avocado and lemon juice with a fork until fluffy and creamy. Chop cilantro, tomato, peppers and onion. Mix well and season with salt and pepper. Allow mixture to rest for an hour or so before serving so flavors can mix.
