Two years ago I was very uncomfortable with my physical appearance because I had let myself become overweight. I made a commitment to begin exercising on a regular basis and to eat better. I lost about 35 pounds in five months and was feeling much better. However, my mind and body had reached a plateau and I was quickly becoming bored and frustrated. I was seeking new ideas, new challenges and new advice to motivate myself. I was also looking to improve muscle tone and definition. That is what brought me to Fit 4 Life. After just a few weeks of slow strength training and following their diet advice, I began to see amazing results. Not only did I lose body fat and increase muscle tone, I felt energized and excited. Baked Halibut with Cashew Crumb Topping

Ingredients
- 4 small halibut filets (4-6 ounces each)
- 2 tsp extra virgin olive oil
- 1/2 cup dried bread crumbs
- 2 tbsp freshly grated Parmesan cheese
- 2 tbsp finely chopped fresh parsley
- 1 1/2 tbsp finely chopped cashew nuts
- 1 tbsp fresh snipped tarragon (or 1/2 teaspoon dried tarragon)
- 1 tsp grated lemon zest
- 1/2 tsp paprika
- Freshly ground pepper to taste

Method
- Preheat oven to 425 degrees.
- Place halibut filets in baking dish (or individual gratin dishes) lightly coated with non-fat cooking spray.
- In small bowl, stir together all remaining ingredients. Spread crumb-nut mixture on top of each filet.
- Bake until fish flakes and top is golden - approximately 12-15 minutes. Serve with steamed vegetables.
