Two years ago I was very uncomfortable with my physical appearance because I had let myself become overweight. I made a commitment to begin exercising on a regular basis and to eat better. I lost about 35 pounds in five months and was feeling much better. However, my mind and body had reached a plateau and I was quickly becoming bored and frustrated. I was seeking new ideas, new challenges and new advice to motivate myself. I was also looking to improve muscle tone and definition. That is what brought me to Fit 4 Life. Summer Roasted Salmon
The benefits of incorporating fish into our diets are becoming more and more apparent all the time. Here is an easy salmon recipe perfect for summer. It comes from the Eat Clean Diet Cookbook, which is available at Fit 4 Life.

Ingredients
- 4 6-oz. salmon filets
- 2 tsp (30 ml) best-quality olive oil
- Sea salt and fresh black pepper
- Juice of one lemon
- 1 bunch fresh green onions, trimmed
- 1/4 cup (60 ml) combined parsley, rosemary, thyme, chives

Method
- Preheat oven to 450 degrees.
- Prepare a baking dish with a light coating of cooking spray or olive oil. Place salmon filets in the baking dish skin side down. Brush a coating of olive oil into the salmon. Sprinkle each filet with some sea salt and black pepper. Squeeze the juice of the lemon over the salmon. Lay the green onions on top.
- Roast the filets in the oven for 10 minutes. Remove from heat. Remove the wilted green onions. Dust each filet with a generous helping of the chopped herbs. Serve hot.
