Two years ago I was very uncomfortable with my physical appearance because I had let myself become overweight. I made a commitment to begin exercising on a regular basis and to eat better. I lost about 35 pounds in five months and was feeling much better. However, my mind and body had reached a plateau and I was quickly becoming bored and frustrated. I was seeking new ideas, new challenges and new advice to motivate myself. I was also looking to improve muscle tone and definition. That is what brought me to Fit 4 Life. Crispy Tuna Triangles

Ingredients
- 2 cans water-packed tuna, drained
- 2 cloves garlic, minced
- 2 tsp lime juice
- 1/2 tsp each salt, pepper and ground cumin
- 1/4 cup each chopped fresh cilantro and green onion
- 1/2 cup yogurt cheese (see below; must be made in advance)
- 4 six-inch whole-grain wraps
- Cooking spray

Method
- In small bowl mix together tuna, garlic, lime juice, salt, pepper, cumin, cilantro and green onion.
- Spread yogurt cheese on one side of each wrap.
- Spoon one-quarter tuna mixture over half of each wrap. Sprinkle evenly with cilantro and green onion. Fold the uncovered half of wrap over filling and press together.
- Heat skillet, spray with cooking spray, place quesadillas in skillet and cook over medium-high heat. Use spatula to press down, browning, and then flip. Cook until golden -- 2-3 minutes per side. Cut each folded wrap in half.

To Make Yogurt Cheese:
Place 2 cups low-fat, plain, organic or natural yogurt in a colander lined with two layers of cheesecloth. Place the colander over a large bowl to catch the liquid that drips out of the yogurt. Place this set-up in the refrigerator and let stand overnight. Discard the liquid in the bowl below, and you are left with rich, creamy yogurt cheese. Two cups of yogurt makes one cup of yogurt cheese.
